I am a professional chef with dozens of excellent knives in my personal collection. As a chef, I have a slight disdain for knife sets and usually hand choose knifes individually. The only set I had previously was the set I got from school. Well, that doesn't work too well when your GF likes a pretty looking counter.
I've had experience with Schmidt Brothers knives before in professional kitchens and knew that the steel they use is excellent, the same steel used in the premier lines of Wusthof and Henkels. They take a good edge and have good edge retention. I knew they had good balance, good ergonomics and they take a beating. So I chose this set as the one for my home kitchen counter. It's beautiful and gets many comments from friends that visit, but they are good enough that I don't mind using them too. I still have and use other knives at home, but their kept in their sleeves in a drawer because the GF wants a beautiful set on the counter rather than my chaotic collection.
